Jam

It has been an entire year since my good friend Laura taught me how to make freezer jam. J and I have enjoyed every last drop of it. Literally we are on our last container. So Monday I decided to try something new. Something I have wanted to learn and try for quite a while now. I wanted to learn how to make regular jam in jars which requires something I had no clue how to do. Seal the Jars. I had even more incentive to try this out because we are hearing so much about food storage at church. Over the past few weeks I have been really working at organizing food storage for our family. Two weeks ago we packed sugar at a friends house in Mylar bags. This Saturday we are packing rice. I am feeling so relieved to have started. Any way, just in case of any serious emergencies I thought it would be helpful to have a supply of food that didn't require refrigeration or freezing.

I was scared to death that my jars would not seal correctly but thankfully my mom was on the phone for moral support the entire time and they worked! This batch was raspberry peach jam and we think it is pretty tasty.
One batch of jam made four jars. I still had ingredients left over so I made another batch of freezer jam which are shown on the right. Don't mind the dusty looking jars, I promise they were sterilized when I started. It must be a film from the boiling water because these pictures were taken almost immediately after.

This was a lot of fun and much easier than I anticipated. It is a little time consuming but I am thrilled to have jam as part of my food storage. I don't know how jam and rice will taste together since that is pretty much all I have. I best keep working at it.

I wish I could have been there doing jam with you again! :) Raspberry-peach, sounds delicious! You can save a jar to give me when I come home. :) And I absolutely love the picture of Jace peeking through the branches of the tree - you've got to get that one framed!
